Zucchini Pasta Salad with Avocado Spinach Dressing

Introduction:

Zucchini noodles (“zoodles”) are the perfect gluten-free, zucchini pasta!


Ingredients:

1 1/2 cups spiraled organic zucchini
1/2 cup shelled edamame
1/2 cup sliced organic celery
1/2 cup chopped organic red bell pepper
1/2 cup organic cherry tomatoes
1/4 cup feta cheese
2 tablespoons kalalmata olive

Avocado Spinach Dressing
1/2 cup fresh packed fresh spinach
1/2 ripe avocado
juice of 1 lemon
2 tablespoons extra virgin olive oil
2 tablespoons Greek yogurt plain
1/2 teaspoon salt
1/4 teaspoon pepper




Instructions:

1. Spiralize zucchini. 
2. In a high powdered blender mix dressing ingredients until smooth
3. Add celery, peppers edamame, feta cheese, tomatoes and olives to the spiralized zucchini pasta.
4. Drizzle the dressing on top and Enjoy!
