Fresh Life Fam: Week of September 28th

PEAR SALAD

INGREDIENTS
Balsamic Vinaigrette Dressing:
1/3 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon dijon mustard
3 cloves garlic minced
Salt and freshly ground black pepper
Salad:
1/2 cup candied pecans roughly chopped
8 oz salad greens (you can use the butter lettuce, kale, and baby spinach from your box)
1/2 cup parmesan cheese shaved NOT grated
2 pears sliced thinly
1/2 cup feta cheese or goat cheese
1/3 cup dried cranberries

INSTRUCTIONS
Balsamic Vinaigrette Dressing:
Add all the Balsamic Vinaigrette ingredients to a food processor and blend for about 20 seconds until combined. Taste and adjust for salt and pepper.
Store in refrigerator in an airtight container until ready to use.
Salad:
Layer greens and pears in a large bowl, add 3/4 of the dressing and toss to combine.
Top with parmesan, dried cranberries, and candied pecans.
Serve garnished with feta cheese or goat cheese. Drizzle with the remaining dressing.
Serve immediately.

CILANTRO-LIME AVOCADO CHICKEN SALAD
(SERVED IN AN AVOCADO!)

INGREDIENTS

12 oz shredded chicken
1/2 of a large avocado, diced
1/4 cup celery, chopped
1/4 cup cilantro, chopped
juice of 1/2 of a lime
1/2 cup nonfat Greek yogurt (more if desired)
1/4 tsp cumin
salt and pepper to taste

INSTRUCTIONS

Combine greek yogurt, lime juice, and cumin together in a small bowl.
Combine chicken, avocado, celery, and cilantro together in a medium bowl. Pour dressing over chicken mixture and stir to combine. Season with salt and pepper to taste.
Chill in air tight container or serve immediately.

GRILLED PINEAPPLE
(BONUS, YOU DO NOT NEED A GRILL TO MAKE THIS DELICIOUS DESSERT!)

INGREDIENTS

For the marinade:
2 tbsp dark honey
1 tsp olive oil
1 tbsp fresh lime juice
1 tsp ground cinnamon
8 pineapple slices (1/2 inch thick)

INSTRUCTIONS

In a small bowl, combine the honey, olive oil, lime juice, and cinnamon and whisk to blend. Set aside.
Heat the grill or a grill pan.
Lightly coat with cooking spray.
Lightly brush the pineapple with the marinade.
Grill turning once and basting once or twice with the remaining marinade, until tender and golden, about 3-4 minutes on each side.
Serve warm and optional ice cream on top!

Pears offer dietary fiber, including prebiotics, which promotes bowel regularity, constipation relief, and overall digestive health. To get the most fiber from your pear, eat it with the skin on.
