Fresh Life Fam: Week of December 28th

Hey there Fresh Lifers!

We hope you are having a wonderful week! We know the last week of the year is a weird one.. never really knowing what time, day, week or even year it is... but we wanted to make the last Newsletter of 2020 a fun one!

Whether you are celebrating the New Year with closest friends and family (from a safe distance), with your significant other, or just with your favorite pet, you can use your box this week to make some (or all) of the recipes below to have a fun & festive New Year's Eve!!

Cheers to an exciting, healthy, amazing, joyous 2021

NEW YEAR'S HOPPIN' JOHN RECIPE WITH KALE

Ingredients
12 oz. salt pork or pork belly, diced
2 cans black eyed peas in liquid, or 4 cups cooked
1 bunch kale de-stemmed and chopped or shredded
1 onion finely chopped
4 cloves garlic minced
1/2 tsp. dried thyme
sea salt to taste
ground black pepper to taste
hot sauce to taste (optional)
Instructions
In a wok or large cast iron skillet, sautée the pork on medium low until crispy and brown on the edges. It will release a lot of fat and water in the process. Let the water cook off.
Remove pork and set aside, leaving the fat.
Add chopped onions to the pork fat and cook until clear.
Add cooked black eyed peas with their liquid and garlic, then sautée 2-3 minutes more.
Add chopped kale and thyme, and sautée until fully cooked down, about 5-6 minutes.
Return crispy salt pork to the mixture and cook 2 more minutes.
Season with salt, pepper and hot sauce (if using) and serve.




NEW YEAR'S EVE BLUEBERRY CHAMPAGNE COCKTAIL!

Ingredients
1 oz blueberry juice
1 oz St. Germain
4 oz brut champagne
Fresh blueberries
Fresh thyme

Instructions
Pour chilled blueberry juice into a champagne flute
Add chilled St. Germain
Top with chilled champagne or prosecco
Add fresh blueberries and thyme sprigs to garnish






LOADED BAKED POTATO BITES!

Ingredients
1 lb russet potatoes , sliced 1/2 inch thick
3 tablespoons salted Challenge Butter , melted
Salt and pepper
4 ounces shredded cheddar cheese (about 2 cups)
4 slices cooked bacon , chopped
1/2 cup sour cream
3 green onions , sliced

Instructions
Preheat oven to 400°F. Line sheet pan(s) with parchment paper or foil.
In a large bowl toss potatoes in the butter until well coated.
Arrange potatoes in a single layer on the sheet pan. You may need more than one pan. Sprinkle generously with salt and pepper.
Bake potatoes for 30 minutes or until tender, flipping once halfway through. Baking time may vary based on the size of potato rounds.
Top potato rounds with cheese, about one heaping tablespoon per rounds. Return potatoes to the oven for 3-4 minutes until cheese is melted and bubbling.
Add a dollop of sour cream, a few pieces of bacon, and some scallions to each potato round. Finish with a sprinkling of ground pepper.
