TROPICAL SMOOTHIE //////////////////////////////////////////////////////////////////////////////////////////////////////////////////

INGREDIENTS
2 cups frozen pineapple
2 cups frozen mango
1 cup coconut milk
1 banana
1 kiwi
1/4 cup orange juice (fresh squeezed from your box if you want )


INSTRUCTIONS

Combine all of the ingredients in a blender.
Blend until smooth.
Add toppings and enjoy!

CAPRESE ROASTED BROCCOLI

INGREDIENTS

1 large head broccoli 6 to 8 cups, cut into florets
2 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried Italian seasoning
1/4 teaspoon garlic powder
2/3 cup shredded mozzarella cheese
2 tomatoes diced
1 tablespoon balsamic vinegar
1/4 cup minced fresh basil

INSTRUCTIONS

Preheat the oven to 425°F. On a large baking sheet, toss the broccoli with the olive oil, salt, pepper, Italian seasoning, and garlic powder. Arrange in a single layer and roast until crisp-tender and just beginning to brown in spots, about 15 minutes. Remove from the oven and sprinkle with the mozzarella. Return to the oven until the cheese melts, about 1 minute. Remove from the oven and scatter tomatoes around the broccoli. Drizzle with the balsamic and sprinkle with the basil.

SKILLET CINNAMON APPLES

INGREDIENTS

4 large apples, peeled, cored and sliced into even 1/4 inch slices
1 tablespoon vegan butter or coconut oil or 1/4 water (for water saute)
3 tablespoons coconut sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 teaspoon arrowroot or cornstarch
1/2 cup (113ml) cold water or apple juice/cider
Optional add-ins:

1/4 teaspoon nutmeg
1/4 teaspoon ground ginger

INSTRUCTIONS

Heat butter or oil, over medium heat, add apple slices and saute for 6 minutes.
Mix the cold water and cornstarch, set aside.
To the apples, add the sugar, cinnamon, vanilla and water mixture, and stir to combine. Continue cooking at a gentle boil for 2 – 3 minutes, stirring occasionally, until apples are fork tender.
Let cool a few minutes before serving.
Serve with non-dairy ice cream, on top of cinnamon oatmeal, waffles, french toast and pancakes, or enjoy as is.
Store leftovers in an airtight container for up to 5 – 6 days. You can also freeze for up to 2 months.
