Fresh Life Fam: Week of August 17th

Some of our Fresh Life Fam is heading back to school and we are ready to help! This year is definitely different than others. Whether you are all virtual, in person, or maybe a blend of both, we are here to simplify your produce shopping and help inspire you with some new recipes you can make for breakfast, lunch, snack time, dinner, or dessert.

We will even include some fun recipes these next few weeks that you can ask your kids to help you in the kitchen to make it an exciting group activity!
(like the fun chocolate covered bananas this week)

Apple Slice
Snack Sandwiches
Three Ways
**************

INGREDIENTS:

Peanut Butter Chocolate Chip Apple Slice Snack Sandwiches
1 sweet apple
2 Tbsp peanut butter
4 tsp mini chocolate chips

Nutella, Cranberry, and Coconut Apple Snack Sandwiches
1 sweet-tart apple
2 Tbsp Nutella
2 tsp shredded unsweetened coconut
8 tsp dried cranberries

Cheddar and Honey Ham Apple Snack Sandwiches
1 tart apple
8 slices uncured honey ham
4 slices cheddar cheese

INSTRUCTIONS:

Peanut Butter Chocolate Chip Apple Slice Snack Sandwiches
Cut the apple into thin slices width wise so that the slices are a round shape. Remove the seeds by cutting a circle with a pairing knife or with a mini fun shaped veggie cutter.
Spread peanut butter onto four apple slices and then sprinkle each with a tsp of mini chocolate chips. Create a sandwich by topping each of the four slices with another apple slice.

Nutella, Cranberry and Coconut Apple Snack Sandwiches
Cut the apple into thin slices width wise so that the slices are a round shape. Remove the seeds by cutting a circle with a pairing knife or with a mini fun shaped veggie cutter.
Spread Nutella onto four apple slices. Sprinkle each slice with ½ tsp of shredded unsweetened coconut and then 2 tsp of dried cranberries. Create a sandwich by topping each of the four slice with another apple slice.

Cheddar and Honey Ham Apple Snack Sandwiches
Cut the apple into thin slices width wise so that the slices are a round shape. Remove the seeds by cutting a circle with a pairing knife or with a mini fun shaped veggie cutter.
Stack two slices of honey ham and 1 slice of cheddar cheese onto four apple slices. Create a sandwich by topping each of the four slices with another apple slice.

SNEAKIN' IN THE VEGGIES SANDWICH
*********************************************

INGREDIENTS
1 bell pepper, cut in half (stem and seeds removed)
2 slices smoked turkey breast
¼ avocado, sliced
¼ cup sprouts
½ cup spring mix
1 ounce cheese
½ tablespoon stone ground mustard
¼ tablespoon mayo
(any toppings you would like)

INSTRUCTIONS
Use the bell pepper halves as “bread” and add the sandwich fixings in between.

CHOCOLATE COVERED BANANAS
*******************************************************

INGREDIENTS

4 ripe bananas
2 cups chocolate chips (milk, dark or white)
2 Tablespoons vegetable oil
Assorted toppings

EQUIPMENT:

8 Popsicle sticks, lollipop sticks or sturdy straws

INSTRUCTIONS

Line a baking sheet with wax paper.
Peel the bananas and then slice them in half width-wise. Carefully insert a stick into the bottom of each banana and then place it on the baking sheet. Freeze the bananas for 1 hour.
Melt the chocolate chips with the vegetable oil in a deep metal bowl set over a saucepan of barely simmering water, stirring occasionally, until the mixture is smooth. Remove the bowl of chocolate and set it aside.
Remove the bananas from the freezer, and one at a time, dip them in the chocolate, smoothing it over the entirety of the banana with a spoon. Immediately sprinkle the banana with the assorted toppings and then lay the banana on the wax paper-lined baking sheet.
Repeat the dipping and decorating process with the remaining bananas and then return them to the freezer for 10 minutes, or until the chocolate is firm.
